Lemon Mojito Mocktail

Ingredients
  

  • 2 lemons
  • 10-12 fresh mint leaves
  • 1-2 tablespoons simple syrup
  • 2 cup of sparkling water or any soda
  • Ice cubes
  • Lemon slices and mint sprigs for garnish

Method
 

  1. Start by juicing the lemons. Cut them in half and squeeze out the juice into a small bowl. Set aside.
  2. In a cocktail shaker or a tall glass, muddle the mint leaves and simple syrup together. This will release the mint's flavour and combine it with the sweetness of the syrup.
  3. Add the freshly squeezed lemon juice to the cocktail shaker or glass. Stir well to mix the flavors. Fill a serving glass with ice cubes.
  4. Pour the mint and lemon mixture over the ice. Top the glass with sparkling water or soda filling it to the brim. Stir gently to combine all the ingredients. Garnish the mocktail with a slice of lemon and a sprig of mint.
  5. Serve immediately and enjoy your refreshing Lemon Mojito Mocktail!. Adjust the amount of simple syrup according to your taste preference.

How to Make Simple Syrup
1/2 cup sugar
1/2 water 
  • In a small saucepan, combine sugar and water.
  • Heat over medium heat, stirring occasionally, until the sugar dissolves completely. 
  • Remove from heat and let cool.
  • Store in a jar or bottle in the fridge for up to a month.
Makes about 3/4 cup of simple syrup.
